The Real Woman’s Drink

IMG_4836IMG_4840IMG_4841What’s more exciting about a delicious cocktail than a hot, smart, badass woman making you that delicious cocktail? Oh yeah … that’s right: NOTHING. Because I have a crush — yes, a HUGE crush on Natasha David.

Nitecap has been one of the most popular cocktail bars in the Lower East Side since the day it opened about a year ago, when Natasha partnered with Alex Day and David Kaplan of Death and Co. to bring the sexy speakeasy to the neighborhood.

The cocktail selection is just GLORIOUS, to say the least. Campfire whiskey-based drink Permission to Look with raspberry brandy, acacia honey and lemon juice is the perfect blend of sweet and smoky and warms the belly right up! While Pinky Promise – a beet-infused Aquavit with granny smith apple & lemon juices, ginger and seltzer – refreshes with a zing that hits all your tangy taste buds. Natasha says no drinks here are geared towards either sex; all are meant for anyone and everyone who can enjoy and appreciate a great cocktail. Again, my kind of gal.

Natasha was so warm and welcoming the day I visited Nitecap, even inviting me behind the bar to teach me a few mixing tricks! Lamely enough for someone who works in the kitchen, I am super clumsy. So when it comes to handling drinks? All I can say is: yikes … BIKES.

Pinky Promise

  • 2 oz Beet-Infused Korgstad Aquavit
  • 1 oz Granny Smith Apple Juice
  • 0.75 oz Lemon Juice
  • 0.5 oz Ginger Syrup
  • Top w/ Seltzer
Method: Shake, Strain, Top w Seltzer
Glass: Collins w KD
Garnish: Apple Fan
Origin: Natasha David
*For Beet Aquavit — I use a fancy sous-vide machine for this. But no need! Simply peel and chop up a small red beet and let sit in Aquavit in fridge for 2-3 days depending on how strong you want the beet flavor to be.
*For Ginger Syrup — I juice the ginger and then mix 1.5 parts sugar with 1 part ginger juice in a blender. If you don’t have a blender, a good alternative is to make a simple syrup on the stove with 1 part sugar and 1 part water. Chop up some ginger and throw it in the syrup, letting it simmer on low heat for about 30 minutes. The result won’t be as gingery but it will be just as delicious!
