Recipe for our BUNssssss
6 chicken thighs, skin removed and deboned
1 stick of lemon grass, roughly chopped
1 tablespoons ginger, roughly chopped
3 cloves of garlic, roughly chopped
1 1/2 tablespoons fish sauce
1 tablespoon sugar
1 tablespoon rice wine vinegar
Directions– Place all the ingredients in a bag and let marinate overnight. If you don’t have the time let marinate for at least 1 hour. Make sure you prepare the sauce and the veg for the dish before grilling the chicken (recipes below). To grill the chicken, heat up your grill and grill on each side for around 4-5 minutes, making sure to get nice grill marks. Remove from the heat, slice and place on the rice noodles with the rest of the ingredients.
Sauce-
1 lime, juiced
2 tablespoons rice wine vinegar
1 1/2 tablespoon sugar
2 tablespoons fish sauce
Directions– mix all ingredients. If you want it sweeter add in more sugar
Bun bowl ingredients-
1 packaged of rice noodles
1 cucumber, julienned
1 large carrot, julienned
1 daikon radish, julienned
1 thai chili, finely sliced
1/2 cup roasted, roughly chopped peanuts
fresh mint, basil and cilantro to garnish
fresh lime to garnish
sauce
grilled chicken, sliced
Bring 6 cups of water to boil. Place the noodles in the water and let cook for around 2-3 minutes. Strain and let cool.
When the chicken is grilled and the sauce is ready place a nice handful of noodles on the bottom of the bowl top with some cucumbers, carrots, daikon, chili and arrange the sliced grilled chicken with the peanuts on top. Garnish with the fresh herbs and the lime. Serve with the sauce and enjoy.
