#Grinshpangirls Poutine Recipe

4 russet potatoes

3 tablespoons safflower oil

kosher salt and cracked black pepper to taste

2 tablespoons rosemary, finely chopped

3 cloves of garlic, finely chopped

1/2 cup freshly grated parmesan

3 tablespoons all purpose flour

3 tablespoons unsalted butter

2 cups beef stock

2 cups cheese curds


Preheat the oven to 450 degrees F

Cut the potatoes into really thin strips. Place on a large pan, drizzle with the safflower oil and season well with salt and black pepper. Place into the oven for 25-30 minutes. When they are golden and crunch remove from the oven.

Place the fries in a bowl and add in the rosemary, garlic, parmesan and season with more black pepper. Toss and arrange in a baking dish. Sprinkle over the cheese curds and mix in with the fries.

Make the gravy- heat up the butter in a pan, add in the flour and use a whisk to stir and let the butter melt and brown a little, around 3 minutes on medium heat. Add in the stock. Bring to a boil and let reduce until thickened. Pour over the poutine and place back into the oven. Let bake for 10-15 minutes until all the cheese is melted and the gravy is bubbling. Remove and eat right away.
