#Grinshpangirls “Crack” Madame

There is no way I was’t going to share this recipe with you….Just LOOK at how beautiful that Croque, I mean “Crack” Madame is. Make it at home and eat like a king. Watch the video and get inspired. x

2 pieces of sourdough

2 tablespoons unsalted butter

2 eggs

4-6 slices of smoked ham

3 ounces gruyere-sliced, plus more for grating on top of the sandwich

1 cup bechamel sauce- recipe follows

béchamel sauce

3 tablespoons unsalted butter

3 tablespoon all purpose flour

2 cups whole milk

1/8 tsp freshly grated nutmeg

salt and pepper to taste

1/2 cup parmesan- grated DSC00106Directions- Put the oven on broil

Butter one side of both pieces of bread really well. Flip over and lay over the sliced ham and the gruyere cheese on the unbuttered side of 1 piece of bread (keep the other piece of bread blank for the béchamel sauce).

Make the béchamel- In a pot melt the butter, once it’s melted add in the all-purpose flower and whisk on medium low heat for 2-3 minutes. Add in the milk and stir constantly until it thickens. Grate in the nutmeg and season well with salt and pepper. Whisk until it bubbles a couple time and then turn off the heat. Grate in the parmesan cheese.

Spread a couple tablespoons of the béchamel sauce on the other side of the bread and then press the sandwich together. Get a pan hot and add in a tablespoon of unsalted butter. Place sandwich in and press down with a weight keeping the heat on medium low. I like to use another pan with a kettle of water  placed on top of the sandwich as my weight. Let toast for 3-4 minutes until golden. Flip over and press again on the other side. When the bread is toasted on both sides take off the heat.

Place 3 tablespoons of béchamel on top and place in the oven. Let broil for 3-5 minutes until melted and golden.

While it’s in the oven fry an egg and season with salt and pepper.

Take out the melted, lightly golden crack madame and place the egg on top. Grate more gruyere on top and serve. it’s crack.
